Portabella Pizza

This blog is going through a portabella mushroom phase for a moment, which gives me a good excuse to extoll the virtues of vegan pizzas with a quick pic. Vegan pizza can be just as good, and usually better (I'm looking in your direction, Dominos) than the standard excesses of the chain restaurant pie. It seems especially weird because traditional old-school Italian pizzas, at least according to cooking shows and travel docs, are often these spare little flatbreads with no more than quality tomato sauce and some basil leaves.

Anyway, I made a pizza yesterday with more of those portabella mushrooms. The "cheese" is that great tofu ricotta recipe from Veganomicon. The tomato sauce is the last of my tomato-eggplant sauce I made this fall, which accidentally ended up with the perfect consistency to use as pizzza sauce.

Aaaaah more mushroomlove! This is the 3rd blog I've read today featuring my beloved mushrooms.

I just bought some portobellos and can't wait to make something out of it.

Your pizza looks insanely good...and yep I do this to everyone...I'm self-inviting myself over for a taste test!

oh I just remembered your comment...I don't know if I'll ever be game enough to try making own seitan...

Can't I just make you, River and the rest make them for me? I really wish for this to happen.Would make my life so much easier. Web technology has to keep up with my desires. Instant food appearing in blogs. How about that for a revolution Mikey!

Vegan pizza is the answer to all of life's problems.

I've read about the history of pizza, and like you said, the original stuff didn't even have cheese. Leave it to stupid modern-day Americans to load it down with fattening icky cow cheese.

I was really afraid I'd miss pizza, but I think vegan pizza is pretty awesome. Good call on the vcon ricotta tofu. It's really perfect on pizza.
