Roasted Red Pepper Hummus
1 14 oz. can chickpeas, rinsed and drained
1 tbsp. tahini (sesame seed paste)
1 clove garlic, chopped
1 tbsp. lemon juice
1/2 tsp. black pepper
1/2 tsp. salt
1/2 cup roasted red pepper pieces
2 tbsp. extra virgin olive oil
1. Place all ingredients in a food processor or blender, and process until smooth and creamy. Scrape down the sides a couple of times to make sure everything is well blended.
